TOASTED BUCKWHEAT DOUGHBALLS WITH SOUR CREAM, LEMON AND WILD FENNEL

prepare it this way

Boil a liter of water in a pot with 0.35 oz of salt. Once the water is boiling, add the durum wheat and let simmer for 5 minutes. Once cooked, strain and let cool.
Next, blend the cooked durum wheat with a touch of almond flour and some fresh aromatic herbs to form a thick dough with no lumps. Form the dough into doughballs, roll in the poppy seeds and fry in the hot frying oil for a few minutes until golden brown. Keep warm. Prepare the sour cream separately by combining all the ingredients and letting it sit for 10 minutes.
Serve the fried doughballs in a paper cone, garnish with the sour cream and taste. This smart dish can be enjoyed either while standing for appetizers or as part of a second course based on legumes, which are a well known source of easy to digest proteins.
