Lukewarm farro salad
with octopus

prepare it this way

Fill a pan with water, add the celery stalk, onion and octopus. Bring to a boil, then let simmer for about 60 minutes. Let octopus cool in its own broth.
Strain the octopus, cut in fairly large chunks and place in a large bowl.
In a second pot of boiling water add salt and cook farro for about 10 minutes before straining and adding the farro to the bowl with the octopus.
Add the olives, garnish with oil, salt, soy sauce, parsley and serve warm.

  • 8.8 oz Geovita® precooked Farro
  • 17 oz octopus
  • ½ carrot
  • 1 celery stack
  • 1 onion
  • salt
  • 1 garlic clove
  • 1 oz parsley
  • extra virgin olive oil
  • 1 oz spicy olives
  • soy sauce
