Dice the onion, place in a pan with some oil and fry. Add the gluten-free mix and toast lightly. Add broth a little at a time and stir constantly, cook for about 5 minutes. In a blender, blend the beets thoroughly.
Once the Cerealeguminotto is cooked, add the beets and stir fry briefly before coating with potato starch. On the side, cut the tofu into sections and fry in a pan with a touch of oil, garlic and rosemary.
Serve on a plate with the Cerealeguminotto on the bottom and a small serving of tofu on top. Decorate with edible flowers.
